Taratatouille!!! (express remix)
Shopping list:
two onions
three courgettes (diced)
three aubergines (diced)
two red peppers (diced)
two cloves of garlic (crushed)
a jar of pitted black olives
three fresh, big tomatoes and a glass of water (or alternatively, a tin of chopped tomatoes)
olive oil, thyme, salt, pepper
rice
parmegianno cheese
In a large saucepan (or a Le Creuset pot, ideally), cook the onions in olive oil until golden.
Add the diced pepper, roast some more, then add the augergines. Roast. Add the courgettes. And yes, you got it, ROAST :)
Add the garlic, the thyme, salt, pepper, olives. Cook for a bit, then add the tomatoes and the water (or the tin). Simmer gently until the vegetables are tender and soft.
Serve hot with rice and parmiggiano. Or eggs (yummy too). Can also be served cold.
